A lovely message from Chef Hailey


Hello Reader,

Here’s a message from our favorite chef Hailey!

It’s early in the morning here in Montpelier, Vermont. It’s a bit chilly, and it reminds me of mornings during the wonderful BotanicWise Women's Gathering. Where the mist is softly grazing our sleep, and we are beginning to stir in our tents. I am likely making coffee in the kitchen by now, and lighting the fires for the day.
I so look forward to this time. Where I can be of service to our herbal community and nourish you all, while also feeling energized and appreciated. And of course, a bit tired at times. Preparing and cooking meals for large groups is always a big job, no matter how lovely it can also be.
This year we will have a variety of fresh, locally grown and harvested veggies. These will make themselves known at each meal in many different forms. Each meal will have a mix of fresh and cooked veggies. Of course, there will also be meats, dairy, grain products, and more!
Each meal will have vegan, vegetarian, and gluten-free options. And these will be labeled, so you are in the know. If you have questions before or during any meal, please come find me, and I will do my best to support your needs.
Breakfasts will consist of an egg dish (often frittata), oats, yogurt, fruits, breads, butter, jams, and nut or seed butters. There will be some meats at times, and of course veggies!
Lunches will also have meat and veggie options. Often, something like build-your-own tacos, burritos, or bowls. We will always have fruit available, especially local apples.
Dinner will warm the soul with stew-type meals.
AND We will try to have SOMETHING for dessert at each dinner. Possibly lunch as well. We shall see how many cookies get made, haha.
Each meal will also offer lentils or dal as an extra protein boost for those who want it.
